INGREDIENTS

Ingredients for dragon fruit and melon salad

  • 2 tablespoons honey
  • 1/4 teaspoon lime zest
  • 1/4 teaspoon lemon zest
  • 1 tablespoon fresh lime juice
  • 1 tablespoon fresh lemon juice
  • 350 grams (2 cups) cantaloupe
  • 300 grams (2 cups) honeydew melon
  • 300 grams (2 cups) watermelon
  • 300 grams (2 cups) dragon fruit
  • 50 grams (1/2 cup) fresh mint

PREPARATION

  1. Cut the melons and dragon fruit into half-inch cubes or use a melon baller, and place them in a large mixing bowl.
  2. Mix the honey, zests, and juices together and pour over the melon and dragon fruit.
  3. Gently toss the mixture together to coat the melon and dragon fruit.
  4. Cover and refrigerate for at least 1 hour.
  5. Finely chop the mint and thoroughly combine with the melon and dragon fruit mixture before serving.
