INGREDIENTS
- 2 tablespoons honey
- 1/4 teaspoon lime zest
- 1/4 teaspoon lemon zest
- 1 tablespoon fresh lime juice
- 1 tablespoon fresh lemon juice
- 350 grams (2 cups) cantaloupe
- 300 grams (2 cups) honeydew melon
- 300 grams (2 cups) watermelon
- 300 grams (2 cups) dragon fruit
- 50 grams (1/2 cup) fresh mint
PREPARATION
- Cut the melons and dragon fruit into half-inch cubes or use a melon baller, and place them in a large mixing bowl.
- Mix the honey, zests, and juices together and pour over the melon and dragon fruit.
- Gently toss the mixture together to coat the melon and dragon fruit.
- Cover and refrigerate for at least 1 hour.
- Finely chop the mint and thoroughly combine with the melon and dragon fruit mixture before serving.
