INGREDIENTS

No Bake Cinnamon and Cranberry Energy Bars

  • 125 grams (1/2 cup) peanut butter (unsalted)
  • 5 tablespoons honey
  • 112 grams (1 1/4 cups) rolled oats
  • 60 grams (1/2 cup) dried cranberries
  • 2 teaspoons ground cinnamon
  • Salt to season as desired

PREPARATION

  1. Melt the peanut butter in a saucepan over low heat or in a microwave.
  2. Add the honey and mix until smooth.
  3. Add the cranberries, ground cinnamon and salt to taste.
  4. Stir in the oats and combine thoroughly.
  5. Line a deep baking tray with plastic wrap.
  6. Pack the mixture into the tray to a depth of approximately 2cm (3/4 inch).
  7. Place in a refrigerator for 30 minutes or until set.
  8. Remove mixture from the tray and peel off the plastic wrap.
  9. Cut into bars of desired width and length.

STORAGE

  • Store in an airtight container in the refrigerator for up to 2 weeks
  • Freeze for up to 3 months.
